Baked Bean Casserole-A Trisha Yearwood Recipe

If you've been reading Pig In Mud for a while you know I love beans! As soon as I saw the words "bean" and "casserole" in the July 2013 Issue of Better Homes and Gardens I knew I'd have to try this recipe. The fact that Garth Brooks likes it didn't hurt either:@) I've had hot dogs with baked beans plenty of times, adding hamburger was new to me and I really like it!

These are very tasty beans and perfect for folks that don't like them spicy hot, I wouldn't hesitate to make them for a crowd. Personally I'd use jalapeno and maybe a little cayenne the next time. If you're having a BBQ, they would be perfect to make on the grill. This recipe can easily be cut in half, and half fit nicely into my 8" cast iron skillet. Gotta tell ya, they're great slathered on a hamburger bun too:@)

Baked Bean Casserole-from Trisha Yearwood via BH&G
1 1/2 lb ground beef
1 small onion, chopped
1 bell pepper, cleaned and chopped
(2) 15-16 oz cans pork and beans
1/2 C barbecue sauce-I used Sweet Baby Ray's
1/2 C ketchup
2 Tblsp spicy brown mustard
2 Tblsp Worcestershire sauce
1 Tblsp soy sauce
4 Tblsp brown sugar
6-8 slices bacon, cooked and crumbled
  1. Preheat oven to 350 degrees and spray 9x13 pan with nonstick cooking spray.
  2. Brown ground beef, onion and bell pepper.
  3. Add pork and beans and everything except bacon. Stir well and cook for 5 minutes.
  4. Pour into prepared casserole dish.
  5. Top with bacon and cover dish with tin foil.
  6. Bake for 45 minutes. Remove foil and bake for another 10 minutes.
  7. Let casserole stand for 10 minutes before serving.

  6. Other than hubby and I nobody we know ever serves baked beans any more. They sure gobble them up when we make them though. Mmmmm good.

    These look so good, I can taste them! What's better than baked beans with bacon in them? Or just bacon in general?? Your pie and your candied bacon look marvelous too.
    I made chocolate covered bacon at Christmas this year....so good.

  11. Oh, Yum! I love beans, too. Hubby not so much, so I don't make them often. I have made baked beans with hamburger in them in the past. What I love about this recipe is, it is fancying up good ole, cheap pork n beans. Think I will leave out the hamburger and make this for a side dish for our camping trip next week. Will have to check the pantry, I may need to put the beans on my shopping list. Thanks for sharing. Have a great week.

  12. These look great, Lynn! I saw that recipe, too, and it looked good. I have a signed copy of Trisha Yearwood's cookbook. My hubby worked with someone that knows Garth Brooks, so she had Trisha sign it for me. She has some great recipes, I must say, and I think she's a natural on the Food Network.

  29. I used this recipe as a base for Cajun Cowboy beans, using what I had on hand. I sauteed Vidalia onion, and then added 1 pound of 80/20 ground chuck, 1 pkg of andouille jalapeno sausage. Did not drain. Added 1 can of Bush's original baked beans and 1can of black beans drained. Followed measurements on test of ingredients, using Zataran's Creole Mustard, Stubbs spicy barbecue sauce, and made in cast iron skillet, stove top. Oh, my! Delish!! Served to my Cajun husband as a main dish,with French bread, turnip greens, and onion tots. Thank you for the recipe!

  31. This is the kind of baked beans recipe I've been looking for. Thank you! Can you please advise? Do you, personally, cook the bacon in the oven or in the microwave? I was just concerned that if I cook it in the microwave it would become rubbery or overcooked once baking with the rest of the casserole dish. Thanks again so much!
